- 1/4 tsp sea salt
- 1/3 cup mini chocolate chips
Wet Ingredients
- 1/4 cup + 3 tbsp all-natural peanut butter
- 1 tsp vanilla extract
- 1/4 cup water (more if needed)
Instructions
- Prepare Ingredients: Remove pits from the Medjool dates and gather all ingredients. Having everything ready will make the process smooth.
- Combine in Food Processor: Add the dates, oat flour, peanut butter, cashew nuts, shredded coconut, chia seeds, cinnamon, sea salt, vanilla extract, and 1/4 cup water into a food processor or high-speed blender. Pulse the mixture until it holds together when pinched, indicating it’s sticky enough to form balls. If the mix is too crumbly, add water one teaspoon at a time, pulsing carefully until the right consistency is achieved.
- Add Chocolate Chips: Transfer the mixture into a bowl. Stir in the mini chocolate chips evenly so they’re distributed throughout the dough.
- Form Energy Balls: Lightly oil your hands with a neutral oil to prevent sticking. Scoop about 2 tablespoons of the mixture each time and roll it into a smooth ball with your palms.
