Description

These 20 Minute Brownie Mix Cookies offer a quick and delicious way to enjoy rich, fudgy brownies in cookie form. Made with a boxed brownie mix combined with a few simple ingredients, these cookies bake up soft and chewy with gooey chocolate chips, perfect for a fast treat or dessert.

Ingredients

Dry Ingredients

  • 1 18oz box brownie mix (I used Ghirardelli)
  • ¼ cup all-purpose flour
  • ½ cup mini chocolate chips, plus more for topping

Wet Ingredients

  • 2 large eggs
  • ⅓ cup coconut oil, melted
  • 1 tbsp water
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Mix Dough: In a large bowl, use a paddle attachment or a spoon to stir together the brownie mix, all-purpose flour, eggs, melted coconut oil, water, and vanilla extract until a thick, scoopable dough forms.
  3. Add Chocolate Chips: Gently fold in the mini chocolate chips last. If the dough feels too sticky, allow it to rest for 5 minutes to thicken slightly for easier handling.
  4. Form Cookies: Scoop about 2 tablespoons of dough for each cookie and place them spaced apart on the prepared baking sheet, as they will spread a bit during baking.
  5. Top with Chips: Press a few additional chocolate chips on top of each cookie to give them an appealing, chocolatey finish.
  6. Bake Cookies: Bake for 8 to 10 minutes, or until the edges are set but the centers still look slightly soft. Avoid overbaking to keep the cookies soft and fudgy as they will firm up while cooling.
  7. Cool: Allow the cookies to cool on the baking sheet for about 5 minutes to set further, then transfer them to a wire rack to cool completely before serving.

Notes

  • Letting the dough rest if sticky will help prevent overworking and make shaping easier.
  • Do not overbake; the centers should remain soft as they firm up while cooling.
  • You can substitute coconut oil with melted butter if preferred for a different flavor profile.
  • Using mini chocolate chips ensures even distribution throughout the cookie dough.
