Ingredients

Berry Jam

  • 2 heaping cups blueberries OR raspberries (fresh or frozen)
  • 2 tablespoons chia seeds

Chocolate Coating

  • 1 cup dark or semi-sweet chocolate chips


Instructions

  1. Cook the berries: Place berries in a wide, shallow microwave-safe bowl. Microwave for 2 to 3 minutes, checking at the 2-minute mark, until the berries are softened and release a lot of juice.
  2. Mash and mix in chia: Mash the softened berries with the back of a fork, aiming for a mix of juicy liquid and chunky berry bits. Stir in 2 tablespoons of chia seeds, then let the mixture rest on the counter or in the refrigerator for at least 15 minutes until it thickens to a jam-like consistency.
  3. Scoop & freeze: Line a baking sheet with parchment paper. Using a tablespoon, drop 16 compact spoonfuls of the berry jam onto the sheet. Place the sheet in the freezer for at least 30 minutes, until the jam mounds are firm.
  4. Melt the chocolate: Melt 1 cup of chocolate chips either in the microwave in 20 to 30-second intervals, stirring between each burst until smooth, or melt using a double boiler to achieve velvety melted chocolate.
  5. Coat and swirl: Spoon the melted chocolate over the top of each frozen berry jam mound and gently swirl it to cover the surface fully.
  6. Freeze to set: Return the chocolate-coated bites to the freezer for at least 30 minutes until the chocolate hardens and is firm to the touch. Enjoy cold straight from the freezer.
