- Preheat the oven. Set your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent sticking and for easy cleanup.
- Prepare the egg. Crack 2 large eggs into a large mixing bowl and lightly beat them with a fork until the yolk and white are fully combined.
- Mix ingredients. Add 2 cups of white sugar and 2 cups of peanut butter (smooth or crunchy) to the bowl. Use a silicone spatula to mix everything together thoroughly until the dough is uniform.
- Portion out dough. Using a medium-sized cookie scoop, portion the cookie dough into balls and place them on the lined baking sheets. Make sure to leave at least two inches between each cookie to allow for spreading, placing about 6 cookies per sheet.
- Flatten the cookies. Press down on each dough ball using the back of a fork, making a crosshatch pattern first in one direction then perpendicular to it. This helps flatten the cookies and adds the classic peanut butter cookie design.
- Bake the cookies. Place the baking sheets in the preheated oven and bake for 11 to 12 minutes, or until the cookies have just set around the edges and look lightly golden.
- Cool the cookies. Let the cookies cool on the baking sheet for about 5 minutes, as they will be fragile immediately after baking. Then transfer them to a wire rack to finish cooling completely before serving.
