Description

Ingredients

Blueberry Mousse

  • 170 g frozen blueberries
  • 1 tbsp caster sugar
  • 1 large egg white (approx. 40 g)

Optional Whipped Cream

  • 50 ml whipped cream
  • Optional dash of lemon juice
  • Optional caster sugar to taste


Instructions

  1. Prepare Whipped Cream (Optional): If serving the mousse with whipped cream, whisk 50 ml of cream in a large bowl using an electric hand mixer or stand mixer fitted with a whisk attachment until soft peaks form. Sweeten lightly with caster sugar and add a dash of lemon juice to enhance the flavor. Set aside.
  2. Make Blueberry Puree: Place the frozen blueberries into a food processor and blend into a rough puree. Add 1 tablespoon of caster sugar and pulse briefly to combine evenly with the fruit.
  3. Blend with Egg White: Add the egg white to the blueberry mixture in the food processor. Blitz for 2-3 minutes until the mixture is smooth, fluffy, and has at least doubled in volume. Occasionally stop and scrape down the sides to ensure even blending.
  4. Assemble and Serve: Spoon the mousse into serving glasses. Optionally, layer or top with the prepared whipped cream. Serve immediately to enjoy the fresh texture before the blueberries begin to release excess water.
