Ingredients
Whipped Cream Mixture
- 3 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Cookies
- 1 1/2 packages Oreo Thins (about 54 cookies)
Instructions
- Whip the Cream: In the bowl of a hand or stand mixer fitted with the whip attachment, add 3 cups heavy whipping cream, 1/2 cup powdered sugar, and 1 tsp vanilla extract. Whip on medium-high speed until stiff peaks form, which takes about 1-2 minutes. Monitor carefully as it happens quickly.
- Layer the Base: Spread a thin layer of the whipped cream mixture on the bottom of a springform pan. Then add a layer of Oreo Thins cookies arranged around the pan, about 19 cookies for the first layer.
- Alternate Layers: Continue layering by alternating a layer of whipped cream followed by a layer of Oreo Thins cookies. Finish with a top layer of whipped cream, using approximately 54 cookies total in the cake.
- Freeze the Cake: Place the assembled cake into the freezer and freeze for a minimum of 4 hours or overnight to allow the cake to set.
- Prepare to Serve: Remove the cake from the freezer 10 minutes before serving to help release the sides from the pan. You may need to use a knife around the edges to loosen the cake from the springform pan.
- Garnish: Crush the remaining Oreo Thins cookies and sprinkle them over the top of the cake as a garnish before serving.
Notes
- Keep an eye on the whipped cream during whipping to avoid overbeating and turning it into butter.
- If using a different type of cookies, ensure they are thin to get the best layering effect.
- The icebox cake is best served slightly thawed for easy slicing.
- Store leftover cake in the freezer covered tightly to maintain freshness.
- Using a springform pan makes it easier to remove the cake without damaging the layers.
