Ingredients

Caramel Base

  • 1 cup soft Medjool dates (pitted, about 12 dates)
  • 2 tbsp peanut butter or almond butter (can substitute any nut or seed butter)
  • 2 tbsp coconut milk (can substitute any milk option)
  • 1-2 tsp vanilla extract

Topping

  • 1 cup dark chocolate
  • Flaky sea salt, for sprinkling


Instructions

  1. Soften Dates: If your dates aren’t super soft, soak them in hot water for 10–15 minutes. Drain the water thoroughly before proceeding to ensure a smooth caramel texture.
  2. Blend Ingredients: Add the pitted dates, coconut milk, vanilla extract, and your choice of almond or peanut butter into a high-speed blender or food processor. Blend until the mixture becomes smooth and creamy, scraping down the sides as needed to incorporate all ingredients evenly.
  3. Adjust Consistency and Sweetness: If the caramel mixture is too thick, add a splash more milk to loosen it. For extra sweetness, add a touch of maple syrup or a few additional dates, blending again to combine.
  4. Press Caramel Into Pan: Line a loaf pan with parchment paper and spread the caramel mixture evenly inside, pressing it down firmly to create a compact layer.
  5. Freeze Until Firm: Place the loaf pan in the freezer for 1-2 hours until the caramel is firm enough to cut without sticking.
  6. Cut and Dip: Remove the caramel from the freezer and, working quickly in batches to avoid melting, cut it into 15 equal portions. Dip each caramel piece into melted dark chocolate and immediately sprinkle with flaky sea salt while the chocolate is still wet.
