Description

These 6 Ingredient Peach Magic Cookies are a delightful and easy-to-make treat combining the sweetness of peaches, the crunch of pretzels, and the tropical flavor of shredded coconut. Ready in just 25 minutes, they’re perfect for a quick dessert or snack and yield 16 delicious cookies with a golden top and a soft, chewy texture.

Ingredients

Dry Ingredients

  • 1 1/2 cups unsweetened shredded coconut
  • 1 1/2 cups salted mini pretzel twists, crushed
  • 1 cup quick cooking rolled oats
  • 1 cup chopped peaches

Wet Ingredients

  • 1 can (14 ounce) sweetened condensed milk
  • 1/3 cup peach jam

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to ensure your cookies don’t stick and bake evenly.
  2. Mix Ingredients: In a large mixing bowl, combine the shredded coconut, crushed salted pretzel twists, chopped peaches, rolled oats, and sweetened condensed milk. Stir well until all the ingredients are evenly incorporated into a dough-like mixture.
  3. Form Cookies: Using a spoon or cookie scoop, portion out the dough into mounds of about 3 tablespoons each (a scant 1/4 cup) on the prepared baking sheet. Use your hands to gently push any loose or crumbly bits back into the dough mounds to ensure they hold together.
  4. Add Peach Jam: Spoon approximately one teaspoon of peach jam onto the top of each cookie mound. If you like, lightly press a pretzel twist onto the top for added crunch and decoration.
  5. Bake: Place the baking sheet in the preheated oven and bake the cookies for 12 to 15 minutes, or until the tops are golden brown and set.
  6. Cool and Serve: Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes to fully set. Enjoy warm or at room temperature for the best flavor and texture.

Notes

  • You can substitute fresh peaches with frozen peaches; just thaw and drain excess moisture before using.
  • The sweetened condensed milk acts as a binder and sweetener; do not substitute with evaporated milk.
  • For an extra flavor boost, add a teaspoon of vanilla extract to the dough mixture.
  • Cookies can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • If desired, press additional pretzels on top before baking for extra crunch and presentation.
