Description

These Air Fryer Tuna Cakes with Cheddar Cheese and Grated Carrot are a crispy, flavorful, and healthy meal option. Packed with flaked tuna, sharp cheddar, fresh dill, and a hint of lemon, these easy-to-make patties cook quickly in the air fryer to achieve a golden crust without excess oil. Perfect for a light lunch, snack, or dinner, they provide a satisfying combination of protein and veggies.

Ingredients

Main Ingredients

  • 2 cans (266g total) albacore flaked white tuna, packed in water, drained
  • 1/2 cup panko crumbs
  • 1/2 cup finely grated cheddar cheese
  • 1/2 cup finely grated carrot (about 1 medium carrot)
  • 1 tablespoon chopped green onion
  • 1 tablespoon chopped fresh dill

Binding & Flavoring Mixture

  • 1 large egg
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon ground black pepper

Finishing

  • Oil spray (for coating patties)

Instructions

  1. Combine Main Ingredients: In a large bowl, mix together the drained tuna, panko crumbs, grated cheddar cheese, grated carrot, chopped green onion, and fresh dill until well incorporated.
  2. Make the Binding Mixture: In a separate small bowl, whisk the egg, mayonnaise, Dijon mustard, freshly squeezed lemon juice, garlic powder, fine sea salt, and ground black pepper until smooth and combined.
  3. Mix and Bind: Pour the egg and mayo mixture over the tuna mixture. Stir thoroughly until the mixture holds together firmly and is well blended.
  4. Chill the Mixture: Cover the bowl and refrigerate the mixture for 30 to 60 minutes. This chilling step helps the patties firm up and makes shaping easier.
  5. Shape Patties: Remove from the refrigerator and shape the mixture into 8 equal patties, each about 3/4 inch thick and roughly 3 1/2 tablespoons in size.
  6. Prepare for Air Frying: Lightly spray both sides of each patty with oil to promote browning and prevent sticking. Place them in a single layer inside the air fryer basket.
  7. Air Fry: Cook the patties in the air fryer at 400°F (205°C) for 13 to 15 minutes. There is no need to flip them during cooking. They should turn golden brown and crispy on the outside.

Notes

  • Use tuna packed in water for a lighter option, and ensure it is well drained to avoid soggy patties.
  • Chilling the mixture is essential for firm patties and easier handling.
  • Spraying the patties with oil ensures a crispy exterior and prevents sticking to the air fryer basket.
  • These tuna cakes can be served with a side salad, tartar sauce, or as a sandwich filling.
