Description

Crispy and flavorful Air Fryer Zucchini Fries are a healthy and delicious snack or side dish. Coated in a savory blend of parmesan, panko breadcrumbs, and everything bagel seasoning, these zucchini spears get perfectly golden and crunchy using an air fryer with minimal oil, making them a guilt-free treat.

Ingredients

Dry Ingredients

  • 1 cup panko bread crumbs
  • 1 cup finely grated parmesan cheese
  • 1 tablespoon everything bagel seasoning

Wet Ingredients

  • 3 large eggs
  • 2 tablespoons olive oil

Main Ingredient

  • 2 large zucchini, cut into spears (3-inches long and ½-inch thick)

Instructions

  1. Preheat Air Fryer: Preheat the air fryer to 400ºF and spray the air fryer basket with cooking spray to prevent sticking.
  2. Mix Coating: In a bowl, combine the parmesan cheese, panko bread crumbs, and everything bagel seasoning thoroughly. Set this mixture aside for use in breading the zucchini.
  3. Whisk Eggs: Crack the eggs into a separate bowl and whisk them until fully blended to create the egg wash.
  4. Coat Zucchini – First Dip: Dip each zucchini spear into the egg wash until fully coated.
  5. Coat Zucchini – First Bread: Dredge the egg-coated zucchini spear in the panko and parmesan mixture until completely covered.
  6. Double Dip: Dip the breaded zucchini spear again into the egg wash, then coat it again in the panko crumb mixture for extra crispiness. Place the coated spears on a plate.
  7. Repeat: Continue the dipping and coating process until all zucchini spears are thoroughly coated.
  8. Air Fry – First Batch: Lay the zucchini spears in a single layer in the air fryer basket, ensuring they do not touch or overlap. Drizzle with olive oil. Cook at 400ºF for 6-8 minutes, checking at 8 minutes for a golden brown crisp.
  9. Air Fry – Remaining Batch: Remove cooked zucchini fries, then air fry the remaining batch following the same method.
  10. Serve: Serve hot with your favorite dips like ranch or sriracha for added flavor. Enjoy your crispy air-fried zucchini fries!

Notes

  • Make sure zucchini spears are dry before dipping to ensure the coating sticks well.
  • Cooking times may vary depending on your air fryer model, so keep an eye on the fries to avoid burning.
  • For a lower fat option, reduce the amount of olive oil drizzled over the zucchini before air frying.
  • These fries are best eaten immediately for maximum crispiness.
  • Use gluten-free panko to make this recipe gluten-free if needed.
