Ingredients
Truffle Mixture
- 2/3 cup almond butter
- 1/2 cup shredded unsweetened coconut

- 2 teaspoons melted butter or coconut oil
Chocolate Coating
- 3/4 cup chocolate chips
- Chopped almonds for garnish
Instructions
- Combine Ingredients: In a large bowl, mix together the almond butter, shredded coconut, sliced almonds, 1/2 cup chocolate chips, and melted butter or coconut oil until fully combined.
- Chill the Mixture: Cover the bowl tightly with aluminum foil or plastic wrap and refrigerate for 30 minutes to allow the mixture to firm up, as it will be somewhat runny initially.
- Form the Truffles: Using a cookie scoop or your hands, shape the chilled mixture into small balls.
- Freeze the Truffles: Place the formed balls on a baking sheet lined with parchment paper and freeze for 20 minutes to set them firmly.
- Melt the Chocolate: In a microwave-safe bowl, melt 3/4 cup chocolate chips by heating for 30 seconds, then stirring. Continue heating in 15-second intervals, stirring each time, until the chocolate is completely melted and smooth.
- Dip and Garnish: Dip each truffle into the melted chocolate to coat, then immediately sprinkle with chopped almonds for a crunchy topping.
- Set the Truffles: Return the coated truffles to the freezer to harden, then store them in the refrigerator until ready to enjoy.
