Ingredients

Truffle Mixture

  • 2/3 cup almond butter
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup sliced almonds (reserve some chopped almonds for topping)
  • 1/2 cup chocolate chips
  • 2 teaspoons melted butter or coconut oil

Chocolate Coating

  • 3/4 cup chocolate chips
  • Chopped almonds for garnish


Instructions

  1. Combine Ingredients: In a large bowl, mix together the almond butter, shredded coconut, sliced almonds, 1/2 cup chocolate chips, and melted butter or coconut oil until fully combined.
  2. Chill the Mixture: Cover the bowl tightly with aluminum foil or plastic wrap and refrigerate for 30 minutes to allow the mixture to firm up, as it will be somewhat runny initially.
  3. Form the Truffles: Using a cookie scoop or your hands, shape the chilled mixture into small balls.
  4. Freeze the Truffles: Place the formed balls on a baking sheet lined with parchment paper and freeze for 20 minutes to set them firmly.
  5. Melt the Chocolate: In a microwave-safe bowl, melt 3/4 cup chocolate chips by heating for 30 seconds, then stirring. Continue heating in 15-second intervals, stirring each time, until the chocolate is completely melted and smooth.
  6. Dip and Garnish: Dip each truffle into the melted chocolate to coat, then immediately sprinkle with chopped almonds for a crunchy topping.
  7. Set the Truffles: Return the coated truffles to the freezer to harden, then store them in the refrigerator until ready to enjoy.
