Ingredients

Cheesecake Layer:

  • 1½ cups cottage cheese (Good Culture 2% low fat recommended)
  • ½ cup plain Greek yogurt
  • 3 tbsp maple syrup
  • 1 tsp vanilla bean paste (or vanilla extract)

Apple Layer:

  • 1 medium apple (peeled and diced)
  • 1 tbsp coconut oil or butter
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt

Crumble Topping:

  • ½ cup rolled oats
  • ¼ cup almond flour
  • 2 tbsp coconut sugar (or brown sugar)
  • 2 tbsp coconut oil or butter (melted)
  • ½ tsp cinnamon


Instructions

  1. Cook the Apples: In a small skillet, heat 1 tablespoon of coconut oil over medium heat. Add the peeled and diced apple, 2 tablespoons maple syrup, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and a pinch of salt. Cook for 5–7 minutes, stirring occasionally, until the apples are softened and caramelized. Remove from heat and let cool slightly.
  2. Prepare the Crumble: In a small bowl, combine ½ cup rolled oats, ¼ cup almond flour, 2 tablespoons coconut sugar, melted 2 tablespoons coconut oil, and ½ teaspoon cinnamon. Mix until crumbly. Spread the mixture on a parchment-lined baking sheet and toast in the oven at 350°F (175°C) for 8–10 minutes, stirring once halfway through, until golden and fragrant. Alternatively, toast the crumble in an air fryer for 2–4 minutes.
  3. Make the Cheesecake Base: In a food processor or high-speed blender, combine 1½ cups cottage cheese, ½ cup plain Greek yogurt, 3 tablespoons maple syrup, and 1 teaspoon vanilla bean paste. Blend for 30–45 seconds until the mixture is smooth and creamy. Set aside.
  4. Assemble the Jars: Using 4oz mini mason jars or small glasses, layer the ingredients starting with a spoonful of the crumble topping, followed by the cooked apple filling, then the cheesecake base, a second layer of apple mixture, and finish with crumble topping. Repeat layers as desired.
  5. Chill & Serve: Refrigerate the assembled jars for at least 30 minutes to allow the flavors to meld and the cheesecake layer to set. Serve chilled and optionally drizzle with coconut caramel sauce for extra indulgence.
