Perfect for breakfast, brunch, or a cozy afternoon treat, this bread brings the flavors of classic apple fritters in an easy-to-make loaf form.

Ingredients

Batter

  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk (room temperature)

Apple Layer

  • 1 1/2 cups apples (peeled and small diced)
  • 2 tablespoons light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Cinnamon Sugar

  • 1/2 cup dark brown sugar (packed)
  • 2 teaspoons cinnamon

Glaze

  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1 splash vanilla extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F. Line the bottom of a 9×5 loaf pan with parchment paper and heavily butter the sides to prevent sticking.
  2. Cream butter and sugars: In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar for about 3-4 minutes until the mixture is light and fluffy.
  3. Add eggs and vanilla: Add the eggs one at a time to the creamed butter mixture, beating well after each addition. Stir in the vanilla extract thoroughly.
  4. Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to combine the dry ingredients evenly.
  5. Combine wet and dry ingredients: Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix gently until just combined, avoiding overmixing.
  6. Prepare apple layer: In a bowl, toss the diced peeled apples with light brown sugar, cinnamon, and nutmeg until evenly coated.
  7. Make cinnamon sugar: Combine dark brown sugar and cinnamon in a separate small bowl to create the cinnamon sugar topping.
  8. Assemble the loaf: Spread half of the batter evenly into the prepared loaf pan. Layer half of the apple mixture on top, then sprinkle half of the cinnamon sugar evenly over the apples.
  9. Repeat layers: Add the remaining batter over the first layer, then top with the rest of the apples and sprinkle the remaining cinnamon sugar over the apples.
  10. Bake: Place the loaf pan in the preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  11. Cool the bread: Remove the bread from the oven and allow it to cool in the pan for 6-8 minutes. Then carefully lift the bread out using the parchment paper and place it on a cooling rack.
  12. Prepare glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth to make a silky glaze.
  13. Glaze the bread: Immediately drizzle the glaze over the warm bread to create a shiny, sweet topping. Serve and enjoy your Apple Fritter Bread!

Notes

  • Ensure eggs and buttermilk are at room temperature for better batter consistency.
  • Use peeled and small diced apples for even cooking and texture.
  • Do not overmix the batter to keep the bread tender.
  • Use parchment paper and butter the pan thoroughly to prevent sticking.
  • The glaze should be drizzled while the bread is still warm for best texture and flavor.
  • Store leftover bread in an airtight container at room temperature for up to 3 days, or refrigerate to extend freshness up to 5 days.
