Ingredients
Dry Ingredients
- 1 2/3 cups (205g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon salt
Wet Ingredients
- 1 cup (115g) unsweetened applesauce
- 3/4 cup (168g) vegetable oil (extra-virgin olive oil, melted coconut oil, or canola oil will work)
- 1 cup (200g) granulated sugar
- 1/3 cup (65g) light brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
Glaze
- 1 1/2 cup (180g) powdered sugar
- 2 tablespoons real maple syrup
- 2 tablespoons milk
Instructions
- Preheat and prepare pan: Preheat the oven to 325°F (163°C). Grease a 9×5-inch loaf pan to prevent sticking, and set it aside for later.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, and ground cloves until well combined. This ensures the spices and leavening agents are evenly distributed.
- Combine wet ingredients: In a medium bowl, stir together the unsweetened applesauce, vegetable oil, granulated sugar, light brown sugar, and salt until well incorporated. Then, mix in the eggs one at a time, followed by the vanilla extract, blending thoroughly.
- Combine wet and dry mixtures: Pour the wet ingredients into the dry ingredients bowl. Gently fold them together until just combined, leaving some small lumps – do not overmix to keep the bread tender.
- Bake the bread: Pour the batter into the prepared loaf pan and smooth the top slightly. Bake in the preheated oven for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Let the bread cool in the pan on a wire rack for about 20 minutes. Then, carefully invert the bread onto the rack and turn it right side up, allowing it to cool completely.
- Prepare the glaze: In a small bowl, stir together the powdered sugar, real maple syrup, and milk. Adjust consistency as needed by adding more milk (1 teaspoon at a time) if too thick or more powdered sugar if too thin, whisking well after each addition until smooth.
- Glaze the bread: Place parchment paper under the rack to catch drips. Drizzle the desired amount of glaze over the cooled bread and allow it to set for about 30 minutes.
- Storage: Cover leftover bread and store at room temperature for 3 to 4 days or refrigerate for up to 1 week to maintain freshness.
Notes
- Do not overmix the batter to keep the bread light and moist; some lumps are fine.
- You can substitute vegetable oil with extra-virgin olive oil, melted coconut oil, or canola oil based on preference.
- Ensure the bread is completely cooled before glazing to prevent the glaze from melting and running off.
- If you prefer a thicker glaze, reduce the milk gradually instead of adding more powdered sugar to maintain sweetness balance.
- This bread freezes well; wrap tightly and freeze up to 3 months. Thaw at room temperature before serving.
