Instructions

  1. Soften the Onion: Place the minced red onion in a medium bowl and add the lime juice. Toss well to coat the onion evenly with the lime juice, then let it sit for 5 minutes. This helps soften the onion’s bite and enhances the salsa’s overall flavor.
  2. Add Avocados: Gently fold in the cubed avocados, coating them with the lime-infused onion mixture. This ensures the avocado absorbs some zing and also prevents it from browning quickly.
  3. Combine Remaining Ingredients: Add the cubed mango, minced serrano pepper, cilantro, mint, and 1/2 teaspoon of kosher salt to the bowl. Gently toss everything together to combine, being careful not to mash the avocados.
  4. Adjust Seasonings and Serve: Taste the salsa and add more salt or lime juice if desired. Serve immediately with tortilla chips or as a fresh topping for grilled dishes.
