Ingredients
Pickled Shallot
- 1 red shallot
- 2 tbsp red wine vinegar
Avocado Spread
- 1 large ripe avocado
- 1 tbsp lime juice (approx. juice of half a lime)
- 1/4 tsp salt
- 1/4 tsp black pepper
Toast Toppings
- 2 thick slices of sourdough bread
- 1 red Fresno chilli, sliced
- 1 tbsp pumpkin seeds
- 1 tbsp sunflower seeds
- 2 tbsp chopped fresh coriander (cilantro)
- 3 tbsp crumbled feta cheese
Instructions
- Prepare Pickled Shallots: Peel the shallot and slice it into thin rounds. Place the slices in a small bowl or dish and pour over the red wine vinegar. Stir to coat and let sit for 10 minutes to pickle while you prepare the rest.
- Mash the Avocado: Slice the avocado in half, remove the stone, and scoop out the flesh into a bowl. Add lime juice, salt, and black pepper. Using a fork, roughly mash the avocado to your preferred texture; lumpy is recommended but mash smoother if desired.
- Toast the Bread: Toast the sourdough slices until golden and crisp. Place each slice on separate plates.
- Assemble the Toast: Spoon the mashed avocado evenly onto each toasted bread slice.
- Add Toppings: Sprinkle sliced red Fresno chilli, pumpkin seeds, sunflower seeds, fresh coriander, and crumbled feta cheese over the avocado layer.
- Garnish with Pickled Shallots: Add 6-7 pickled shallot slices on top of each toast. Serve immediately with remaining pickled shallots on the side to add extra flavor while eating.
Notes
- For creamier avocado, use a ripe, soft avocado.
- Adjust chili quantity to taste or substitute with other mild chilies for less heat.
- Use gluten-free bread to make this recipe gluten-free.
- Pickling shallots adds a lovely tang and balances richness of avocado and feta.
- Toast bread just before serving to keep it crispy.
