Ingredients

Roasted Tomatoes

  • 1-1/2 pints (640 grams) cherry tomatoes
  • 2 cloves garlic, sliced into 3 pieces each
  • 6 sprigs thyme
  • 5 tablespoons (65 grams) extra virgin olive oil
  • 3/4 teaspoon kosher salt

Avocado Mixture

  • 3 medium Hass avocados (or 2 large Hass avocados)
  • 2 tablespoons (8 grams) chopped fresh parsley (or equal amount of fresh basil)
  • 2 teaspoons (10 grams) fresh squeezed lemon juice
  • 5 tablespoons oil reserved from roasted tomatoes
  • 1-1/2 teaspoons kosher salt (divided between components)

Assembly

  • 4 slices rustic bread or sourdough bread (sliced 1/2-inch thick)
  • Freshly ground black pepper, for seasoning
  • Additional chopped parsley for garnish


Instructions

  1. Roasted Tomatoes: Preheat the oven to 375°F. In a 2-quart baking dish, scatter the sliced garlic and thyme sprigs. Add the washed cherry tomatoes on top. Drizzle with olive oil and sprinkle with 3/4 teaspoon kosher salt. Toss to coat evenly. Roast for 15-20 minutes, stirring halfway through, until tomatoes wrinkle and burst. Let cool to room temperature. Reserve some of the tomato and olive oil liquid in a small bowl.
  2. Toast the Bread: Lightly toast the 4 slices of bread until they are golden brown. Brush each slice generously with the reserved tomato olive oil mixture to infuse flavor.
  3. Prepare Avocado Mixture: Halve, pit, and scoop the avocado flesh into a large bowl. Add chopped parsley, lemon juice, 1/2 teaspoon kosher salt, and 2 teaspoons of the reserved tomato olive oil. Mash with a fork, leaving some chunks for texture. Season to taste with extra salt and oil if desired.
  4. Assemble the Toast: Spread the avocado mixture evenly over each slice of toasted bread. Top each with 6-8 roasted tomatoes. Drizzle a bit more of the tomato olive oil on top, sprinkle with additional chopped parsley, and finish with freshly ground black pepper.
  5. Store Leftover Avocado Mixture: To keep leftover avocado mixture fresh and from browning, press it into a round container to eliminate air pockets. Smooth the surface and pour a thin layer (no more than 1/4 inch) of water on top. Cover with a lid. When ready to use, pour off the water and lightly stir the avocado before serving.
