Ingredients
Base
- 1 cup whole milk (250ml)
- 3 teaspoons powdered gelatine
- ⅓ cup caster sugar (or white granulated sugar) (66g / 2 ¼oz)
Cream Mixture
- 1 cup thickened cream (heavy cream) (250ml)
- ½ cup Baileys Irish Cream (125ml)
Instructions
- Prepare the Ramekins: Lightly grease glasses or ramekins with a small amount of oil to ensure easy removal of the panna cotta later. Be careful not to use too much oil to avoid pooling.
- Bloom the Gelatine: Pour the milk into a medium saucepan. Evenly sprinkle the gelatine powder over the surface and let it sit undisturbed for 3 minutes until softened.
- Dissolve Gelatine: Turn the heat to low and gently stir the mixture with a rubber spatula. Keep pressing the gelatine against the pan to dissolve it fully without allowing the liquid to boil or steam.
- Add Sugar: Stir in the caster sugar until completely dissolved, still ensuring the mixture does not get too hot.
- Combine Cream and Baileys: In a large jug, mix the thickened cream with Baileys Irish Cream thoroughly, ensuring no lumps remain. Then add the milk and gelatine mixture and stir well to combine.
- Pour and Chill: Divide the panna cotta mixture evenly into the prepared ramekins. Chill in the refrigerator for at least 6 hours or preferably overnight to set.
- Unmold and Serve: If serving on plates, dip the ramekins briefly in hot water for about a minute to loosen the panna cotta. Run a finger around the edges to break the vacuum seal, then invert onto a serving plate and gently jiggle to release. Adjust dipping time if panna cotta sticks or liquid runs excessively.
