Description

Baked Alaska is a stunning dessert featuring layers of rich brownie, dual-flavored ice cream, and fluffy toasted meringue. This recipe combines a fudgy brownie base with mint chip or pistachio and strawberry ice cream, all encased in a golden-brown meringue shell. Perfect for special occasions, this impressive treat is served with toasted meringue for a beautiful finish.

Ingredients

Brownie Base

  • 1 Box brownie mix (16 to 18-Ounce, plus ingredients listed on box)

Ice Cream Layers

  • 1 Quart mint chip or pistachio ice cream, slightly softened
  • 1 Quart strawberry ice cream, slightly softened

Meringue

  • 4 large egg whites, at room temperature
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Line bowl: Line a bowl the same size as the brownie pan with plastic wrap to prepare for the ice cream layers.
  2. Fill with ice cream: Press softened mint chip or pistachio ice cream firmly into the lined bowl, removing any air pockets.
  3. Add second ice cream layer: Carefully spread the softened strawberry ice cream over the first layer and smooth the top evenly.
  4. Freeze ice cream layers: Cover with another layer of plastic wrap and freeze for at least 4 hours or overnight until solid.
  5. Prepare brownie layer: Follow the box instructions to bake the brownies and then allow them to cool completely.
  6. Make meringue: In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until foamy.
  7. Add sugar and vanilla: Gradually add granulated sugar one tablespoon at a time while increasing to high speed. Beat until glossy stiff peaks form, then mix in the vanilla extract.
  8. Assemble dessert: Place the cooled brownie layer on a parchment-lined baking sheet or heatproof pan. Unmold the frozen ice cream dome onto the brownie and keep frozen.
  9. Spread meringue: Cover the ice cream and brownie completely with the prepared meringue, sealing all edges to encase the ice cream.
  10. Toast meringue: Toast the meringue under a broiler for 1-2 minutes watching carefully to achieve a golden-brown finish, or use a kitchen torch for an even toast.
  11. Serve or freeze: Slice the Baked Alaska and serve immediately, or return to the freezer until ready to serve.

Notes

  • Ensure the ice cream layers are fully frozen before assembly to keep the dessert firm.
  • Use room temperature egg whites for better volume in meringue.
  • Toast the meringue carefully to avoid burning; keep a close eye when broiling.
  • For easier unmolding, line the bowl tightly with plastic wrap and press firmly when adding ice cream.
  • This dessert is best served cold and eaten the same day for optimal texture.
