Ingredients

Chicken and Seasonings

  • 2 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon

Apple and Sauce

  • 1 medium apple, sliced (skin on, see blog for best apple types)
  • 1 cup organic chicken stock
  • 1/2 cup raw honey
  • 2 tbsp dijon mustard
  • 1 medium apple, sliced
  • 1/4 cup organic chicken stock


Instructions

  1. Prep + Season Chicken: Preheat your oven to 400°F and lightly grease a non-stick griddle pan or a large oven-safe cast iron skillet. In a large bowl, combine cleaned and rinsed chicken breasts with olive oil and the seasoning blend—sea salt, On Everything All-Purpose Blend, smoked paprika, ground cumin, and ground cinnamon. Toss well to coat each piece evenly.
  2. Score the Chicken: Place the seasoned chicken breasts on a cutting board and make small 1-inch slits or cuts across the top of each breast. This helps the marinade and glaze penetrate the meat deeply for more flavor.
  3. Marinate (Optional but Recommended): Transfer the seasoned chicken into a sealable ziplock bag and refrigerate for at least 3 hours, ideally overnight, to maximize flavor. When ready to bake, allow the chicken to sit at room temperature for 15-20 minutes.
  4. Arrange for Baking: Place the chicken breasts side-by-side in your prepared pan. Arrange the sliced apples around and between the chicken pieces. If you are adding vegetables like potatoes or butternut squash, tuck them in now so they cook evenly.
  5. Add Stock and Bake: Pour 1 cup of chicken stock around the chicken and apples. Bake for 35-40 minutes until the chicken is golden brown, crispy on the outside, and cooked through inside. In the last 15 minutes of baking, you will add the glaze.
  6. Make Apple Honey Dijon Glaze: While the chicken bakes, combine raw honey, dijon mustard, sliced apples, and 1/4 cup chicken stock in a saucepan over medium-high heat. Bring to a boil, then reduce to medium-low and simmer 1-2 minutes, stirring frequently until the sauce thickens smoothly. Remove from heat.
  7. Apply Glaze and Finish Baking: Spoon the glaze generously over the chicken and apples in the pan, ensuring everything is coated. Optionally save some glaze for serving. Return to the oven and bake for an additional 15 minutes until the glaze caramelizes and melds with the chicken.
  8. Rest and Serve: Remove from oven and let the chicken cool slightly. Spoon any remaining glaze on top before serving. Pair with salad, pasta, basmati or brown rice, or mashed potatoes for a complete meal.
