Ingredients
Chicken

- Freshly ground black pepper, to season chicken
- 1 1/2 tablespoons Mazola® Corn Oil
Toppings and Garnish
- 2 cups grape tomatoes, diced
- 1 tablespoon feta cheese
- 2 basil leaves, torn or cut into small pieces
- 2 tablespoons balsamic glaze
Instructions
- Prepare Chicken: Pat the chicken breasts dry with paper towels to remove excess moisture for better searing.
- Season Chicken: Season both sides of the chicken breasts generously with salt and freshly ground black pepper.
- Tenderize: Cover the chicken and set aside for 10 minutes to allow the salt to tenderize the meat.
- Heat Oil: Pour Mazola® Corn Oil into a skillet and heat over medium-high heat until the oil begins to shimmer, indicating it is hot enough for cooking.

- Rest Chicken: Remove the chicken from heat, tent with tin foil, and let rest for 5 minutes to retain moisture.
- Slice Chicken: Cut each chicken breast crosswise into slices for easy plating.
- Plate and Garnish: Place one chicken breast on each dinner plate. Arrange the diced tomatoes next to the chicken in the shape of a heart. Sprinkle half of the feta cheese and basil leaves over the tomatoes.
