Ingredients

Chicken

  • 2 thin chicken breasts (about 5-6 ounces each)
  • Kosher salt or table salt, to season chicken
  • Freshly ground black pepper, to season chicken
  • 1 1/2 tablespoons Mazola® Corn Oil

Toppings and Garnish

  • 2 cups grape tomatoes, diced
  • 1 tablespoon feta cheese
  • 2 basil leaves, torn or cut into small pieces
  • 2 tablespoons balsamic glaze


Instructions

  1. Prepare Chicken: Pat the chicken breasts dry with paper towels to remove excess moisture for better searing.
  2. Season Chicken: Season both sides of the chicken breasts generously with salt and freshly ground black pepper.
  3. Tenderize: Cover the chicken and set aside for 10 minutes to allow the salt to tenderize the meat.
  4. Heat Oil: Pour Mazola® Corn Oil into a skillet and heat over medium-high heat until the oil begins to shimmer, indicating it is hot enough for cooking.
  5. Sear Chicken: Pat the chicken dry again before placing it in the hot oil. Cook for 2-3 minutes on each side until the internal temperature registers 165°F (74°C), ensuring the chicken is fully cooked and juicy.
  6. Rest Chicken: Remove the chicken from heat, tent with tin foil, and let rest for 5 minutes to retain moisture.
  7. Slice Chicken: Cut each chicken breast crosswise into slices for easy plating.
  8. Plate and Garnish: Place one chicken breast on each dinner plate. Arrange the diced tomatoes next to the chicken in the shape of a heart. Sprinkle half of the feta cheese and basil leaves over the tomatoes.
  9. Finish with Glaze: Drizzle balsamic glaze over the chicken and tomatoes to enhance flavor and serve immediately.
