Ingredients
Dry Ingredients
- 1½ cups all-purpose flour
- 1¼ teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon fine sea salt
Wet Ingredients
- 1⅓ cups mashed overripe banana
- ⅔ cup packed dark brown sugar
- 1 large egg (room temperature)
- ⅓ cup grapeseed oil (or another neutral oil)
- 1 teaspoon vanilla extract
Add-ins
- ½ cup finely chopped walnuts (untoasted)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (177°C). Prepare a mini muffin pan by spraying it with oil or lining with baking cups for easy removal.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, baking soda, and fine sea salt until well combined.
- Mix Wet Ingredients: In a large bowl, whisk the mashed overripe banana, packed dark brown sugar, and the large egg until the mixture is smooth. Then add the grapeseed oil and vanilla extract and whisk again until fully incorporated.
- Combine Ingredients: Add the dry ingredients to the wet ingredients along with half of the chopped walnuts (¼ cup). Stir gently just until the flour is incorporated, being careful not to overmix to keep the muffins tender.
- Fill and Top Muffin Cups: Spoon the batter into the mini muffin cups, filling nearly to the top. Sprinkle the remaining ¼ cup of chopped walnuts evenly over each muffin.
- Bake and Cool: Bake in the preheated oven for about 15 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Use ripe bananas with brown spots for the best flavor and sweetness.
- If you prefer light brown sugar, it can be used interchangeably with dark brown sugar.
- Room temperature eggs mix more easily and help create a smooth batter.
- Grapeseed oil is neutral and light, but any neutral oil like canola or vegetable oil will work.
- Using mini muffin liners can make removal and cleanup easier.
