Ingredients
Salmon and Seasoning
- 1 pound salmon fillets, cut into 1-inch cubes
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
Sauce
- 1/2 cup kewpie mayo (or regular mayonnaise)
- 1/3 cup sweet chili sauce
- 2 tablespoons sriracha
- 1 tablespoon lime juice
Bowl Components
- 2 cups cooked rice
- 1/2 cucumber, sliced into half moons
- 1 avocado, diced
- 1 cup shelled edamame
- 3 green onions, sliced
- 1 teaspoon sesame seeds
- 1 teaspoon furikake seasoning (optional)
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the salmon.
- Season Salmon: In a large bowl, toss the cubed salmon with garlic powder, paprika, sea salt, and black pepper until evenly coated.
- Prepare Sauce: In a separate bowl, whisk together the kewpie mayo, sweet chili sauce, sriracha, and lime juice until smooth and fully combined.
- Combine Salmon and Sauce: Add about half a cup of the prepared sauce to the seasoned salmon and gently toss to coat all the pieces well. Reserve the remaining sauce for topping after baking.
- Bake Salmon: Arrange the salmon cubes in a single layer on a parchment-lined sheet pan. Bake for 7 minutes, then remove from the oven to flip each piece and bake for an additional 7 minutes until salmon is cooked through.
- Assemble Bowls: Divide cooked rice evenly among four bowls. Top each with the baked salmon cubes, sliced cucumber, diced avocado, and shelled edamame.
- Garnish and Serve: Sprinkle the green onions, sesame seeds, and optional furikake seasoning over the bowls. Drizzle the remaining mayo chili sauce generously on top before serving.
Notes
- For best results, use fresh salmon and avoid overcooking to keep it tender and moist.
- Kewpie mayo adds a creamier texture and slightly sweeter flavor, but regular mayonnaise works well too.
- You can substitute the rice with quinoa or cauliflower rice for a low-carb option.
- Furikake seasoning adds an extra umami boost but is optional.
- Adjust the amount of sriracha in the sauce to modify the spice level according to preference.
