Description

This Bang Bang Salmon Bowl is a vibrant and flavorful dish featuring tender baked salmon cubes tossed in a spicy and tangy mayonnaise chili sauce. Served over fluffy rice and complemented by fresh cucumber, creamy avocado, and nutty edamame, it’s a nutritious and satisfying meal perfect for lunch or dinner.

Ingredients

Salmon and Seasoning

  • 1 pound salmon fillets, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Sauce

  • 1/2 cup kewpie mayo (or regular mayonnaise)
  • 1/3 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon lime juice

Bowl Components

  • 2 cups cooked rice
  • 1/2 cucumber, sliced into half moons
  • 1 avocado, diced
  • 1 cup shelled edamame
  • 3 green onions, sliced
  • 1 teaspoon sesame seeds
  • 1 teaspoon furikake seasoning (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the salmon.
  2. Season Salmon: In a large bowl, toss the cubed salmon with garlic powder, paprika, sea salt, and black pepper until evenly coated.
  3. Prepare Sauce: In a separate bowl, whisk together the kewpie mayo, sweet chili sauce, sriracha, and lime juice until smooth and fully combined.
  4. Combine Salmon and Sauce: Add about half a cup of the prepared sauce to the seasoned salmon and gently toss to coat all the pieces well. Reserve the remaining sauce for topping after baking.
  5. Bake Salmon: Arrange the salmon cubes in a single layer on a parchment-lined sheet pan. Bake for 7 minutes, then remove from the oven to flip each piece and bake for an additional 7 minutes until salmon is cooked through.
  6. Assemble Bowls: Divide cooked rice evenly among four bowls. Top each with the baked salmon cubes, sliced cucumber, diced avocado, and shelled edamame.
  7. Garnish and Serve: Sprinkle the green onions, sesame seeds, and optional furikake seasoning over the bowls. Drizzle the remaining mayo chili sauce generously on top before serving.

Notes

  • For best results, use fresh salmon and avoid overcooking to keep it tender and moist.
  • Kewpie mayo adds a creamier texture and slightly sweeter flavor, but regular mayonnaise works well too.
  • You can substitute the rice with quinoa or cauliflower rice for a low-carb option.
  • Furikake seasoning adds an extra umami boost but is optional.
  • Adjust the amount of sriracha in the sauce to modify the spice level according to preference.
