Sauce
- 2 tablespoons dark soy sauce
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce

Main Ingredients
- 2 tablespoons vegetable oil, divided
- 8 ounces sirloin steak, cut into 1/4 inch strips
- 1/2 cup small diced onion
- 1 cup frozen peas and carrots
- 2 large eggs, lightly beaten
- 3 cups cooked and cooled rice
- Thinly sliced scallions for garnish (optional)
Instructions
- Mix Sauce: In a small bowl, combine the dark soy sauce, soy sauce, oyster sauce, and toasted sesame oil. Set this sauce mixture aside for later use.
- Sear Beef: Heat one-quarter of the vegetable oil in a large skillet over medium-high heat. Add the sirloin strips and sear them until they develop a good char and are just cooked through, about 3 to 5 minutes. Remove the beef from the pan and set aside on a plate.
- Sauté Onion: Add another quarter of the vegetable oil to the skillet. Sauté the diced onion until it softens and begins to brown slightly, approximately 2 minutes.
- Cook Vegetables: Add the frozen peas and carrots to the skillet with the onions, cooking until they soften slightly, around 3 minutes. Transfer the cooked vegetables to the plate with the beef.
- Scramble Eggs: Add a third portion of the vegetable oil to the pan and pour in the beaten eggs. Stir occasionally to scramble them until fully cooked, about 1 minute. Add the cooked eggs to the plate with the beef and vegetables.
- Fry Rice: Use the remaining vegetable oil in the skillet and add the cooked rice. Let it cook undisturbed for about 2 minutes to get a slight char. Stir the rice to mix, then return the beef, cooked vegetables, and scrambled eggs to the skillet, combining everything thoroughly.
- Add Sauce and Heat Through: Pour the prepared sauce over the mixture in the skillet. Stir well to coat all ingredients evenly. Continue cooking for an additional 3 minutes to warm through and blend the flavors.
