Beef and Vegetables

- 8 ounces beef flank steak or top sirloin, sliced into bite size strips (or leftover roast beef)
- 1 small onion, sliced
- 1 medium carrot, thinly sliced
- 1 cup brown mushrooms, sliced
- 1 cup Chinese cabbage, sliced
- 1 cup spinach
Sauce
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce or hoisin sauce
- 1 teaspoon rice vinegar or mirin (optional)
- 1 teaspoon sesame oil
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground black pepper or white pepper
Instructions
- Cook Noodles: Bring a large pot of water to a boil over medium-high heat. Add the egg noodles and a pinch of salt. Cook according to package instructions, about 6 minutes, until tender but firm. Drain thoroughly and set aside.
- Sauté Beef: Heat the vegetable oil in a large wok or skillet over high heat until it’s sizzling hot, about 1 minute. Add the sliced beef and stir-fry until browned on all sides, about 3-4 minutes. If using leftover roast beef, add it in and cook just 1-2 minutes until warmed through.
- Cook Vegetables: Add the sliced onion, carrot, mushrooms, Chinese cabbage, and spinach to the pan with the beef. Stir frequently and cook until the vegetables are tender but still crisp, about 3-4 minutes.
- Add Noodles and Sauce: Add the cooked noodles to the pan. Pour in the soy sauce, oyster or hoisin sauce, rice vinegar or mirin (if using), sesame oil, ground cumin, and pepper. Toss everything together well to evenly coat the noodles, beef, and vegetables with the sauce. Cook for an additional 2-3 minutes to heat through and meld flavors.
- Garnish and Serve: Remove from heat and garnish with white sesame seeds if desired. Serve immediately while hot and enjoy your flavorful beef noodle stir fry.
