Instructions
- Blend the base mixture: In a blender, add ½ cup of mixed berries, whole milk, maple syrup, and vanilla extract. Blend for about 1 minute until the mixture is smooth and well combined.
- Incorporate chia seeds: Pour the blended berry mixture into a medium bowl. Sprinkle the chia seeds over the mixture and stir well to combine evenly. Let it sit for 10 minutes, then stir again to break up any clumps and ensure even consistency.
- Chill the pudding: Cover the bowl and refrigerate the chia pudding for at least 1 hour, or overnight for the best texture and to allow the chia seeds to fully absorb the liquid and thicken.
- Layer the pudding and yogurt: When ready to serve, take a glass or serving dish and begin layering. Start with 2 tablespoons of the berry chia pudding, then add 2 tablespoons of Greek yogurt on top. Repeat the layering to create alternating layers of pudding and yogurt.
- Add toppings and serve: Finish by topping the layered pudding with the remaining fresh mixed berries and sliced almonds. Optionally, drizzle a little extra maple syrup on top for added sweetness before enjoying.
