Instructions

  2. Combine Wet Ingredients: In a separate bowl, whisk together the Greek yogurt, melted and slightly cooled butter, eggs, vanilla extract, and pure maple syrup to create a smooth mixture.
  3. Combine Wet and Dry: Add the dry ingredients to the wet ingredients and gently mix until just combined, being careful not to overmix to keep the muffins tender.
  4. Fold in Sprinkles: Gently fold in the ½ cup of sprinkles, taking care not to overwork the batter to prevent the colors from bleeding.
  5. Prepare Muffin Tin: Spray a mini muffin tin with non-stick cooking spray to prevent sticking. Fill each cup about ¾ full with the batter. This amount should fill approximately one and a half mini muffin tins, making 36 mini muffins total.
  6. Add Toppings: Sprinkle additional sprinkles on top of each muffin cup for extra fun and color.
