Instructions

- Combine Wet and Dry: Add the dry ingredients to the wet ingredients and gently mix until just combined, being careful not to overmix to keep the muffins tender.
- Fold in Sprinkles: Gently fold in the ½ cup of sprinkles, taking care not to overwork the batter to prevent the colors from bleeding.
- Prepare Muffin Tin: Spray a mini muffin tin with non-stick cooking spray to prevent sticking. Fill each cup about ¾ full with the batter. This amount should fill approximately one and a half mini muffin tins, making 36 mini muffins total.
