Ingredients
Filling
- 1 cup Biscoff cookie butter
- 1/3 cup cream cheese (softened)
- 1 cup Biscoff cookie crumbs
Coating
- 12 ounces almond bark or white chocolate candy melts
- 1/4 cup Biscoff cookie butter
Instructions
- Pulse the cookies: Using a food processor, pulse the Biscoff cookies until they form fine crumbs.
- Prepare baking sheet: Line a large baking sheet with parchment paper and set it aside.
- Mix filling ingredients: In a large mixing bowl, use a hand mixer to beat the softened cream cheese and 1 cup of Biscoff cookie butter together until smooth and creamy.
- Fold in crumbs: Gently fold the Biscoff cookie crumbs into the cream cheese mixture until fully combined.
- Form truffle balls: Using a small cookie scoop, portion out the dough mixture and roll each into a smooth ball between your hands. Place each ball onto the prepared parchment-lined baking sheet.
- Freeze balls: Place the baking sheet in the freezer for 15-30 minutes to allow the truffle balls to harden.
- Melt coating: In a microwave-safe bowl, melt the white chocolate candy melts or almond bark in 30-second intervals, stirring each time until fully smooth.
- Add cookie butter: Stir in 1/4 cup of Biscoff cookie butter into the melted chocolate until well combined.
- Coat truffles: Dip each chilled truffle ball into the chocolate mixture, tapping off any excess coating, and return them to the parchment-lined baking sheet.
- Optional garnish: Drizzle extra chocolate or sprinkle additional Biscoff crumbs over the coated truffles if desired.
- Set coating: Place the coated truffles back into the freezer for a few minutes until the chocolate coating is firm.
Notes
- You can substitute almond bark with white chocolate or any other candy melts of your choice.
- Ensure the cream cheese is softened for easier mixing and smoother texture.
- Store the truffles in the refrigerator or freezer to keep them firm.
- You can add a pinch of sea salt on top for a salted caramel twist.
- For a vegan version, use vegan cream cheese and dairy-free chocolate melts.
