Description

Ingredients

Filling

  • 1 cup Biscoff cookie butter
  • 1/3 cup cream cheese (softened)
  • 1 cup Biscoff cookie crumbs

Coating

  • 12 ounces almond bark or white chocolate candy melts
  • 1/4 cup Biscoff cookie butter


Instructions

  1. Pulse the cookies: Using a food processor, pulse the Biscoff cookies until they form fine crumbs.
  2. Prepare baking sheet: Line a large baking sheet with parchment paper and set it aside.
  3. Mix filling ingredients: In a large mixing bowl, use a hand mixer to beat the softened cream cheese and 1 cup of Biscoff cookie butter together until smooth and creamy.
  4. Fold in crumbs: Gently fold the Biscoff cookie crumbs into the cream cheese mixture until fully combined.
  5. Form truffle balls: Using a small cookie scoop, portion out the dough mixture and roll each into a smooth ball between your hands. Place each ball onto the prepared parchment-lined baking sheet.
  6. Freeze balls: Place the baking sheet in the freezer for 15-30 minutes to allow the truffle balls to harden.
  7. Melt coating: In a microwave-safe bowl, melt the white chocolate candy melts or almond bark in 30-second intervals, stirring each time until fully smooth.
  8. Add cookie butter: Stir in 1/4 cup of Biscoff cookie butter into the melted chocolate until well combined.
  9. Coat truffles: Dip each chilled truffle ball into the chocolate mixture, tapping off any excess coating, and return them to the parchment-lined baking sheet.
  10. Optional garnish: Drizzle extra chocolate or sprinkle additional Biscoff crumbs over the coated truffles if desired.
  11. Set coating: Place the coated truffles back into the freezer for a few minutes until the chocolate coating is firm.
