Description

A comforting and hearty Biscuits and Gravy Casserole featuring savory turkey sausage gravy topped with golden baked refrigerated biscuits. Perfect for a weekend breakfast or brunch, this casserole combines classic Southern flavors with easy preparation and baked to perfection in just 50 minutes.

Ingredients

Sausage Gravy

  • 1 pound turkey sausage (mild or spicy)
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 2.5 cups half and half
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Biscuit Topping

  • 1 (16.3 ounce) can refrigerated biscuits
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat and prepare baking dish: Heat oven to 375 degrees Fahrenheit and grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Cook the sausage: Heat a large sauté pan over medium heat. Add the turkey sausage, breaking it apart with a spatula, and cook until browned and fully cooked through.
  3. Make the roux and seasonings: Add butter to the cooked sausage and let it melt. Sprinkle in the flour along with Italian seasoning, rubbed sage, garlic powder, onion powder, paprika, and salt and pepper. Stir frequently and cook the mixture for about one minute to develop flavor and eliminate raw flour taste.
  4. Add half and half and thicken: Gradually whisk in the half and half, stirring constantly to avoid lumps. Bring the mixture to a gentle simmer and cook for 3-5 minutes until the gravy thickens to a creamy consistency.
  5. Pour gravy into baking dish: Transfer the thickened sausage gravy into the prepared 9×13-inch baking dish, spreading evenly.
  6. Prepare biscuit topping: Using clean kitchen shears, cut each biscuit into quarters. Arrange the biscuit pieces in a single layer on top of the sausage gravy in the baking dish.
  7. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the biscuit pieces are golden brown and cooked through.
  8. Rest and garnish: Remove the casserole from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley before serving.
  9. Serve and enjoy: Scoop portions of the biscuits and gravy casserole onto plates and enjoy a warming, delicious meal.

Notes

  • You can use mild or spicy turkey sausage depending on your heat preference.
  • Substitute half and half with whole milk for a lighter version, though gravy may be less creamy.
  • If you prefer, add a sprinkle of shredded cheese on top before baking for extra richness.
  • Leftovers store well in the refrigerator for up to 3 days and reheat in the oven or microwave.
  • Fresh parsley adds a nice color and flavor contrast but can be omitted if unavailable.
