Meat

  • 1 pound turkey sausage

Vegetables

  • 1 ½ cups frozen onion and pepper mix

  • 2 cups shredded cheddar cheese (divided into 1 ½ cups and ½ cup)
  • 4 large eggs
  • 2 cups milk

  • 1 ⅓ cups homemade Bisquick mix
  • ½ teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat and prepare the baking dish: Preheat your oven to 400°F. Spray a 9×13-inch casserole dish with nonstick cooking spray to prevent sticking and set it aside.
  2. Cook the sausage: In a skillet over medium-high heat, cook the turkey sausage until it is browned and no longer pink throughout. Drain any excess fat from the skillet, then transfer the cooked sausage to the prepared casserole dish.
  3. Add vegetables and cheese: Mix in the frozen onion and pepper mix, frozen shredded hash brown potatoes, and 1 ½ cups of shredded cheddar cheese to the sausage in the casserole dish. Stir well to evenly combine these ingredients.
  4. Mix the egg batter: In a large bowl, whisk together the eggs and homemade Bisquick mix until smooth and well combined. Gradually whisk in the milk, sea salt, black pepper, and 2-3 dashes of hot sauce until the mixture is uniform and smooth.
  5. Combine and layer: Pour the egg mixture evenly over the sausage and vegetable mixture in the casserole dish. Use a spatula to gently nestle the sausage mixture down into the egg mixture to ensure everything is well incorporated. Then, sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the top.
