Ingredients

Crust

  • 24 golden Oreo cookies (crumbs divided)
  • ½ cup unsalted butter (melted)

Blackberry Layer

  • 1½ cups blackberries (halved)

Lime Cream Layer

  • 16 oz cream cheese (2 packages, room temperature)
  • 1 cup granulated sugar
  • ⅓ cup lime juice
  • Zest of 1 lime
  • 1½ cups whole milk
  • 5.1 oz box instant vanilla pudding mix
  • 3 tablespoons Lime Jell-O

Blackberry Pie Filling Layer

  • 21 oz can blueberry pie filling

Whipped Topping & Garnish

  • 8 oz Cool Whip (tub, thawed)
  • ¾ cup fresh blackberries (to decorate)
  • Zest of 1 lime (to garnish)
  • Reserved cookie crumbs for garnish


Instructions

  1. Prepare Oreo Crust: Place golden Oreo cookies in a food processor or smash them in a sealed bag until fine crumbs form. In a small bowl, mix the crumbs with melted butter until evenly moistened, reserving a tablespoon for garnish. Press the crumb mixture firmly into the bottom of a 9 x 9 inch dish (or 9 x 13 inch for a thinner dessert). Freeze the crust to set while preparing the next layer.
  2. Add Blackberry Layer: Slice 1½ cups of blackberries in halves and evenly layer them across the chilled Oreo crust.
  3. Prepare Lime Cream Layer: In a large mixing bowl, beat cream cheese and sugar until light and fluffy. Add lime juice, lime zest, and milk, mixing thoroughly. Incorporate the instant vanilla pudding mix and Lime Jell-O last, beating until fully combined and smooth.
  4. Assemble Lime Cream Layer: Pour the lime cream mixture evenly over the blackberry layer, spreading gently into a smooth layer. Return the dish to the freezer to allow this layer to set.
  5. Apply Blackberry Pie Filling: Once the lime cream layer is firm, carefully spoon dollops of blueberry pie filling over it. Gently spread into an even layer with a spoon or spatula. If the filling is too thin, separate the liquid, stir in 2 tablespoons cornstarch, boil until thickened, recombine berries once cooled, and then spread. Freeze for 25 minutes to set.
  6. Add Whipped Topping: Spread the thawed Cool Whip evenly on top of the berry pie filling layer.
