This Blueberry Cottage Cheese Bake is a wholesome and delicious dish combining creamy cottage cheese, fresh blueberries, and a light hint of lemon zest. Perfect for breakfast or a healthy dessert, it’s naturally sweetened with raw honey or maple syrup and features a light, custard-like texture thanks to eggs and oat flour. Easy to prepare and bake, it delivers a nutritious option packed with protein and antioxidants.
Ingredients
For the Bake
- unrefined organic coconut oil or ghee, for greasing the dish
- 4 large eggs, room temperature
- 2 cups cottage cheese
- 1/4 cup raw honey or pure maple syrup
- 2 tsps vanilla extract
- 1/4 cup arrowroot powder, oat flour, or cornstarch
- 1 tsp baking powder
- fresh lemon zest of one large lemon
- pinch of sea salt
- 2 cups fresh or frozen blueberries
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×6 inch baking dish with unrefined coconut oil or ghee to prevent sticking and to add a subtle richness.
- Blend Wet Ingredients: In a food processor or blender, add the eggs, cottage cheese, honey or maple syrup, and vanilla extract. Pulse just until the mixture is smooth and well combined, being careful not to overblend which could affect texture.
- Mix Dry Ingredients: In a small bowl, whisk together your choice of oat flour, arrowroot powder, or cornstarch with the baking powder to ensure even distribution of the rising agent.
- Combine Batter: Transfer the blended egg and cottage cheese mixture into a large mixing bowl. Add the dry flour and baking powder mixture, lemon zest, and a pinch of sea salt. Stir gently until the batter is smooth and homogenous.
- Assemble and Bake: Pour the batter into the prepared baking dish. Evenly distribute the blueberries throughout the top and slightly into the batter. Bake for 30-35 minutes, or until the center is set and a toothpick inserted comes out clean.
- Cool and Serve: Allow the bake to cool before slicing to help it firm up and enhance the texture. Serve as a nutritious breakfast or snack.
- Storage: Store any leftovers wrapped tightly in the refrigerator for up to 4 days to maintain freshness and flavor.
Notes
- You can substitute blueberries with any other fresh or frozen berries like raspberries or blackberries.
- Using oat flour makes this bake gluten-free; ensure your baking powder is also gluten-free if necessary.
- Make sure eggs are at room temperature to help the batter blend smoothly.
- For a vegan alternative, try replacing eggs with a flax egg and use plant-based cottage cheese, but texture may vary.
- If you don’t have a food processor or blender, vigorously whisk the wet ingredients until smooth, but some lumps may remain.
- Allow the bake to cool completely before refrigeration to prevent sogginess.
