These Blueberry Goat Cheese Ice Cream Bars combine the tart sweetness of fresh blueberries with the creamy tang of goat cheese, blended into a smooth, refreshing frozen treat. Naturally sweetened with honey and flavored with vanilla, these no-churn bars are perfect for a gourmet summertime snack or dessert that’s easy to make and delightfully unique.

  • 2 cups fresh blueberries
  • 300 gram package goat cheese, soft and unripened
  • 1/4 cup liquid honey
  • 1 teaspoon vanilla extract


Instructions

  1. Blend Ingredients: Add the fresh blueberries, soft goat cheese, liquid honey, and vanilla extract to a blender. Blend on high speed until the mixture is smooth and well combined, turning a lovely purple color with small flecks of blueberry throughout.
  2. Freeze in Molds: Pour the blended mixture evenly into popsicle molds, insert popsicle sticks, and place the molds in the freezer. Freeze for 5 to 6 hours or until the ice cream bars are solid and fully frozen.
  3. Release and Serve: When ready to enjoy, remove the molds from the freezer and run them briefly under warm water to loosen the bars. Carefully remove the ice cream bars from the molds and serve immediately, or store them in an airtight container in the freezer for later enjoyment.

Notes

  • For creamier bars, ensure goat cheese is soft and unripened for easy blending.
  • If fresh blueberries are not available, frozen blueberries can be used but may require slightly longer freezing time.
