Description

Ingredients

Blueberry Lavender Simple Syrup

  • 1½ cups water
  • ¾ cup blueberries (frozen or fresh)
  • ½ cup granulated sugar (or cane sugar)
  • 2 tablespoons dried lavender

Final Drink

  • ⅔ cup fresh lemon juice
  • 3 cups cold water (plus more to taste)


Instructions

  1. Make Blueberry Lavender Simple Syrup: In a small pot, combine 1½ cups water, ¾ cup blueberries, ½ cup granulated sugar, and 2 tablespoons dried lavender. Cover the pot with a lid slightly ajar and simmer on low heat for 15 minutes, allowing the flavors to infuse and the sugar to dissolve. Then, remove the pot from heat and let the syrup cool completely.
  2. Strain the Syrup: Once the syrup has cooled, strain it into a large pitcher (at least 6 cups/1.4 L capacity) using a fine sieve. Use a spoon to gently mash the blueberries against the sieve to extract as much juice as possible, leaving behind solids and lavender bits.
  3. Finish the Lemonade: Add ⅔ cup fresh lemon juice and 3 cups cold water to the strained syrup in the pitcher. Stir well to combine. Taste the lemonade and add more cold water if you prefer a milder taste. Pour the finished lemonade into glasses filled with ice and serve immediately. Refrigerate any leftovers for up to 3 days.
