Ingredients
Base Recipe:
- 2 sheets of frozen puff pastry, thawed and cut into 24 squares (12 each sheet)
- 1 medium wheel of brie, cut into 24 cubes
- 1 egg, beaten (for egg wash) or oil spray
Cranberry Rosemary Topping:
- ½ tsp cranberry sauce
- Chopped pecans
- Tiny rosemary sprigs
- Honey, for drizzling after baking
Apple Butter & Pecan Topping:
- ½ tsp apple butter
- 1 toasted pecan half per bite
Hot Honey Pistachio Topping:
- ½ tsp hot honey
- Crushed roasted pistachios
Fig Jam & Walnut Topping:
- ½ tsp fig jam
- 1 walnut piece per bite
Instructions
- Prepare the Puff Pastry Cups: Press each puff pastry square into the wells of a greased mini muffin tin, creating a small cup shape to hold the filling.
- Add Brie Cubes: Place one cube of brie into each pastry cup evenly, ensuring each bite has a good amount of cheese.
- Apply Topping Combinations: Choose your desired topping combination for each pastry bite. For Cranberry Rosemary, add ½ tsp cranberry sauce, chopped pecans, and a small rosemary sprig. For Apple Butter & Pecan, top with ½ tsp apple butter and a toasted pecan half. For Hot Honey Pistachio, add ½ tsp hot honey with crushed roasted pistachios. For Fig Jam & Walnut, spread ½ tsp fig jam and place a walnut piece on top.
- Bake: Bake the filled and topped pastry cups in a preheated oven at 375°F (190°C) for 12–15 minutes, or until the pastry is golden and the brie is bubbling and melted.
- Finish and Serve: Let the bites cool slightly in the pan; this allows the cheese to firm up for easier handling. For the Cranberry Rosemary bites, drizzle honey on top after baking for an added touch of sweetness.
