Ingredients
Cheesecake Filling
- 1 cup cottage cheese (Good Culture 2% low fat preferred)
- 1/2 cup plain Greek yogurt
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 cup almond flour (can substitute with oat flour)
- 1/4 cup almond butter
- 2 tbsp cocoa powder
- 1/4 cup chocolate protein powder (optional, can use more cacao powder as substitute)
- 1/2 cup chocolate chips + extra for topping
Crust
- 1 cup chocolate granola (blended into crumbs)
Toppings (optional)
- Extra chocolate chips
- Drizzle of almond butter
- Flaky salt
Instructions
- Blend the filling: Add cottage cheese, Greek yogurt, maple syrup, vanilla extract, cocoa powder, almond flour, almond butter, and chocolate protein powder (if using) into a high-speed blender. Blend for 15–20 seconds until the mixture is smooth and creamy.
- Add chocolate chips: For a smoother texture, pulse the chocolate chips into the mixture briefly using the blender or food processor. Alternatively, fold the chocolate chips by hand to keep them as chunks throughout the cheesecake batter.
- Prepare crust: Blend the chocolate granola in a blender or food processor until it becomes crumbly. Spoon a layer of these crumbs into the bottom of jars and gently press down to form an even crust.
- Assemble the jars: Spoon the brownie batter cheesecake mixture on top of the crust layer in each jar and smooth the surface evenly.
- Chill: Refrigerate the jars for 1 to 2 hours if you prefer a firmer cheesecake texture. You can also enjoy it immediately for a softer, pudding-like consistency.
- Garnish and serve: Before serving, top each jar with extra chocolate chips, a drizzle of almond butter, and a pinch of flaky salt for enhanced flavor.
Notes
- This recipe can be prepared without chocolate protein powder by simply increasing the amount of cocoa powder.
- Substitute oat flour for almond flour if preferred, but note this may slightly alter texture.
- The cheesecake jars can be stored in the refrigerator for up to 3 days.
- If you want a vegan version, replace cottage cheese and Greek yogurt with plant-based alternatives and use maple syrup to sweeten.
- Feel free to swap chocolate chips for chopped nuts or dried fruit for variation.
