Ingredients
Brownie
- 1 cup unsalted butter, cut into cubes
- 6 ounces bittersweet chocolate, chopped or chips
- 1 ½ cup granulated sugar
- ¼ teaspoon salt
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
Berries
- 6 oz fresh strawberries, sliced
- 6 oz fresh blueberries
- 6 oz fresh raspberries
- 4 tablespoons granulated sugar, divided
Whipped Cream
- 1 ½ cups cold heavy whipping cream
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar (from the 4 tablespoons divided)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
- Melt Chocolate and Butter: In a saucepan over low heat, melt the butter and bittersweet chocolate together, stirring continuously until smooth. Remove from heat.
- Mix Batter: Add sugar and salt to the melted chocolate mixture and stir well. Incorporate the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract. Then gently fold in the flour until just combined, being careful not to over-mix.
- Bake Brownies: Pour the batter into the prepared baking dish, spreading evenly. Bake in the preheated oven until the edges are set and the center appears dry, about 20 to 25 minutes. Remove from oven and allow to cool completely.
- Prepare Berries: While the brownies cool, toss the strawberries, blueberries, and raspberries with 2 tablespoons of granulated sugar. Let the berries sit for 10 minutes to macerate and release some juice.
- Whip Cream: In a large bowl, use an electric mixer to beat the cold heavy whipping cream until soft peaks form. Add the vanilla extract and the remaining 2 tablespoons of sugar, then continue beating until medium peaks form.
- Assemble Trifle: Cut the cooled brownies into cubes. In individual 8-ounce glasses or a large trifle bowl, layer cubes of brownies, sweetened berries, and whipped cream. Repeat the layers until all components are used, finishing with whipped cream on top.
- Chill and Serve: Place the assembled trifle in the refrigerator to chill until ready to serve. For best flavor and texture, serve within a few hours and up to 24 hours. Store leftovers covered in the fridge for up to 3 days.
Notes
- Ensure brownies are completely cooled before assembling to prevent the whipped cream from melting.
- Use fresh, ripe berries for the best flavor and texture.
- You can prepare the brownies and berries ahead of time to save assembly time on serving day.
- If preferred, substitute bittersweet chocolate with semi-sweet or dark chocolate chips depending on your sweetness preference.
- For a lighter option, consider using whipped topping instead of heavy cream, though it may affect texture.
