Description

This decadent Brownie Pie combines the rich, fudgy texture of a brownie with the flaky goodness of a pie crust. With a luscious chocolate filling studded with chocolate chips and baked to perfection, it’s an irresistible dessert that serves 8 and takes about an hour from start to finish.

Ingredients

Pie Crust

  • 1 9-inch pie crust

Filling

  • ½ cup salted butter (melted and still warm)
  • 1 ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs (lightly beaten)
  • 1/3 cup unsweetened cocoa powder
  • 1 cup chocolate chips
  • ¼ cup all-purpose flour

Instructions

  1. Prepare the Oven and Pie Crust: Preheat your oven to 375°F (190°C). Line a 9-inch pie dish with the pie crust, crimping the edges as desired. Use a fork to poke holes in the sides and bottom of the crust to prevent bubbling during baking.
  2. Bake Pie Crust with Weights: Cover the crust with a sheet of parchment paper and fill it with pie weights or dry beans to weigh it down. Bake for 10 minutes or until the edges turn golden brown. Carefully remove the weights and parchment paper, then bake the crust for an additional 5 minutes until the bottom is golden. Set the crust aside to cool slightly.
  3. Adjust Oven Temperature: Lower the oven temperature to 350°F (175°C) to prepare for baking the filling.
  4. Combine Wet Ingredients: In a medium-sized bowl, whisk together the melted butter, sugar, and vanilla extract until well combined and smooth.
  5. Add Eggs: Incorporate the lightly beaten eggs into the butter mixture, whisking thoroughly until fully blended.
  6. Add Dry Ingredients: Stir in the cocoa powder and all-purpose flour until the mixture is uniform and smooth.
  7. Fold in Chocolate Chips: Gently fold the chocolate chips into the batter to ensure an even distribution without overmixing.
  8. Fill and Bake Pie: Spoon the brownie filling into the partially baked pie crust and smooth out the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  9. Cool and Serve: Remove the pie from the oven and allow it to cool completely for at least one hour before slicing and serving to let it set properly.
  10. Storage Instructions: Store any leftovers in an airtight container in the refrigerator for up to 3 days to maintain freshness.

Notes

  • Blind baking the pie crust ensures it stays crisp and doesn’t get soggy from the brownie filling.
  • Use room temperature eggs for better mixing and texture in the filling.
  • The brownies may look slightly undercooked in the center when removed from the oven but will firm up as they cool.
  • For extra flavor, you can sprinkle a pinch of sea salt on top before baking.
  • Make sure the melted butter is warm but not hot when mixing with eggs to prevent curdling.
