Chocolate Coating
- 1/2 cup dark chocolate
- 1/2 tsp coconut oil
Instructions
- Soften Dates: Remove the pits from your Medjool dates and soak them in hot water for 5 minutes to soften them, which helps achieve a chewier texture and makes blending easier.
- Blend Filling Base: Drain the water from the softened dates and place them in a food processor with the sunflower seed butter and vanilla extract. Blend until the mixture resembles thick, sticky caramel.
- Add Remaining Ingredients: Add protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, pausing to scrape the sides as necessary to ensure even mixing.
- Form Balls: Scoop the dough into approximately one tablespoon-sized portions and roll each into a ball using your hands.
- Chill Balls (Optional): You can enjoy the protein bites as-is, or place them on a lined baking sheet and freeze for at least 30 minutes to firm up before coating in chocolate.
- Melt Chocolate Coating: In a microwave-safe dish, combine dark chocolate and coconut oil. Heat on high for 20-30 second intervals, stirring in between until fully melted and smooth.
- Dip and Set: Dip each chilled protein ball into the melted chocolate to coat thoroughly. Place the coated balls back on the lined baking sheet and allow the chocolate to set, either at room temperature or in the fridge for faster firming.
