Ingredients

Brownie Base

  • 1 box brownie mix
  • 1/2 cup vegetable oil
  • 2 eggs + 2 egg yolks
  • 3 tablespoons milk

Peanut Butter Layer

  • 2 1/4 cups powdered sugar
  • 1 1/3 cups smooth peanut butter
  • 1 cup salted butter, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Chocolate Topping

  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons very warm heavy cream
  • 2 teaspoons corn syrup


Instructions

  1. Prepare Brownie Base: Preheat the oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper and lightly spray with baking spray. In a large mixing bowl, combine the brownie mix, vegetable oil, eggs, egg yolks, and milk. Whisk until smooth and no dry streaks remain. Pour the batter into the prepared baking dish and bake on the center rack for 22-25 minutes. Remove from the oven and transfer the pan to a wire cooling rack; cool completely before proceeding.
  2. Make Peanut Butter Layer: In the bowl of a stand mixer fitted with a paddle attachment, combine powdered sugar, peanut butter, softened butter, vanilla extract, and salt. Beat on medium speed until very smooth and fully combined, creating a creamy peanut butter frosting.
  3. Prepare Chocolate Topping: Place the semi-sweet chocolate chips in a bowl and pour the very warm heavy cream over them. Let stand for 1 minute to soften, then whisk until the mixture is melted and smooth. If any chips remain unmelted, briefly microwave the bowl for a few seconds, then stir until fully combined. Add the corn syrup and mix until smooth and glossy.
  4. Assemble the Brownies: Once the brownies are completely cooled, spread the peanut butter layer evenly over the top. Carefully pour the slightly cooled chocolate topping over the peanut butter layer and smooth it out with a spatula. Allow the topping to set before cutting into squares.
  5. Storage: Store the brownies in an airtight container or resealable bag at room temperature for up to 4 days for best freshness.
