Description

A vibrant and customizable Burrito Bowl featuring seasoned shredded chicken, rice, beans, fresh vegetables, and creamy toppings. This quick and easy skillet-based recipe is perfect for a satisfying meal in under 30 minutes.

Ingredients

Protein and Seasonings

  • 1 tablespoon olive oil or avocado oil
  • 3 cups shredded rotisserie chicken (or cooked cubed chicken)
  • 1 tablespoon taco seasoning

Base and Vegetables

  • 3 cups cooked rice (white, cilantro lime, Mexican, brown or cauliflower rice)
  • 1 1/2 cups chopped Romaine lettuce (or your favorite greens)
  • 15 oz black beans or pinto beans (rinsed, drained and warmed)
  • 1 cup frozen sweet corn (warmed, can use fresh sweet corn)
  • 1 cup halved grape tomatoes

Cheese and Herbs

  • 1 cup shredded cheese (Mexican blend, Monterey Jack or cheddar)
  • 1/3 cup chopped cilantro

Toppings and Extras

  • Guacamole (or avocado slices)
  • Pico de Gallo (or salsa)
  • Pickled Red Onions
  • Sour Cream (or plain Greek yogurt)
  • Creamy Cilantro Lime Dressing (for drizzling)
  • Lime wedges (for serving)

Instructions

  1. Heat and Season the Chicken: In a large skillet, heat the oil over medium heat. Add the shredded chicken and sprinkle with the taco seasoning. Stir to coat the chicken evenly with the seasoning. If the mixture looks dry, add 1 tablespoon of water to help distribute the flavors evenly. Cook the chicken just until warmed through, then taste and adjust seasoning if needed. Remove from heat.
  2. Assemble the Burrito Bowls: Divide the cooked rice evenly among four bowls. Top each with seasoned chicken, chopped Romaine lettuce, warmed beans, sweet corn, halved grape tomatoes, shredded cheese, and chopped cilantro.
  3. Add Toppings: Garnish each bowl with guacamole or avocado slices, Pico de Gallo or salsa, pickled red onions, and a dollop of sour cream or plain Greek yogurt.
  4. Finish and Serve: Drizzle creamy cilantro lime dressing over the assembled bowls if desired. Serve immediately with lime wedges on the side for squeezing over the bowls to add brightness and zest.

Notes

  • You can substitute rotisserie chicken with any cooked chicken you have on hand.
  • Cilantro lime rice adds a nice fresh flavor but any rice variety works.
  • Use cauliflower rice to make this dish lower carb or gluten free.
  • Pickled red onions bring a tangy crunch but can be replaced with raw red onions or omitted.
  • Adjust toppings and cheese type according to your preference or dietary needs.
