Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg or cinnamon (optional)
Wet Ingredients
- 2 large eggs, lightly beaten
- 2 cups buttermilk
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
Instructions
- Prepare the Oven: Preheat your oven to 225°F (107°C) and place a large sheet pan inside to keep waffles warm as you cook the batch.
- Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and nutmeg or cinnamon if using. Stir thoroughly to blend all dry elements.
- Add Wet Ingredients: Add the lightly beaten eggs, buttermilk, melted butter, and vanilla extract to the dry ingredients. Whisk gently until just combined, leaving a few small lumps or streaks of flour to ensure the batter isn’t overmixed. Then, let the batter rest for about 10 minutes to develop flavor and texture.
- Preheat and Grease Waffle Iron: Turn on the waffle iron and allow it to fully preheat. Grease the iron lightly with spray or butter to prevent sticking.
- Cook Waffles: Pour about 1/3 to 1/2 cup of batter onto the waffle iron, spreading it until it reaches about 1/2 inch from the edges. Cook according to the waffle iron’s instructions, generally taking around 2 to 3 minutes until golden brown and crisp. Remove the waffle and place it on the warmed sheet pan in the oven to keep it hot.
- Repeat: Grease the waffle iron again and repeat with the remaining batter until all waffles are cooked and kept warm in the oven.
- Serve: Serve waffles hot with butter, warm maple syrup, and your favorite toppings such as fresh berries or whipped cream. Enjoy your homemade buttermilk waffles!
Notes
- Do not overmix the batter to ensure waffles are tender and fluffy rather than tough.
- Letting the batter rest for 10 minutes improves the waffle texture.
- Keeping cooked waffles warm in the oven prevents them from getting soggy before serving.
- You can substitute the optional nutmeg with cinnamon or omit it entirely depending on your preference.
- For crispier waffles, cook a little longer until golden brown.
