- 2 cups multicolored cherry or grape size tomatoes, halved
- 1 – 8 oz package fresh mozzarella pearls
- 10 basil leaves, thinly sliced (stack basil leaves, roll up, and slice very thin)
Dressing Ingredients
- 2 cups balsamic vinegar
- ⅓ cup mild olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Prepare Tomatoes and Mozzarella: Slice the cherry tomatoes in half and arrange them evenly on a serving plate with the fresh mozzarella pearls scattered among them.
- Slice Basil: Stack the basil leaves, roll them tightly, and slice very thinly to create delicate basil ribbons. Sprinkle these evenly over the tomatoes and mozzarella.
- Make Balsamic Reduction: Pour the balsamic vinegar into a small pan and cook over medium heat, stirring occasionally, until it reduces to about half a cup. This should take about 7-10 minutes. Remove from heat and allow to cool completely.
- Dress the Salad: Once the balsamic reduction is cooled, drizzle it and the mild olive oil evenly over the arranged tomatoes, mozzarella, and basil.
- Season: Lightly sprinkle salt and pepper over the salad to taste, enhancing the fresh flavors.

- Be careful not to overcook the balsamic vinegar; it should be syrupy but not burnt.
