Instructions
- Cook the cauliflower: Boil a pot of salted water and simmer the cauliflower florets for about 5 minutes until very tender, then drain and let cool. Alternatively, microwave the cauliflower with water for 10 minutes on high, stirring halfway, then drain and cool.
- Prepare the dressing: Whisk together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, paprika, sea salt, and black pepper in a small bowl until smooth.
- Combine the salad ingredients: In a large bowl, mix the cooled cauliflower with diced onion, sliced celery, and chopped hard-boiled eggs.
- Add the dressing and mix: Pour the dressing over the cauliflower mixture and stir until everything is well coated.
- Chill and garnish: Refrigerate the salad for at least 1 hour to develop flavors, if time allows. Before serving, garnish with chopped chives and a sprinkle of paprika if desired.
