Ingredients

Vegetables and Eggs

  • 1 head Cauliflower (cut into small florets)
  • 1/3 cup Onion (finely diced)
  • 1/3 cup Celery (sliced thinly or diced)
  • 2 large Eggs (hard boiled, chopped)

Dressing

  • 2/3 cup Mayonnaise
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper

Garnish

  • Chives (optional, for garnish)


Instructions

  1. Cook the cauliflower: Boil a pot of salted water and simmer the cauliflower florets for about 5 minutes until very tender, then drain and let cool. Alternatively, microwave the cauliflower with water for 10 minutes on high, stirring halfway, then drain and cool.
  2. Prepare the dressing: Whisk together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, paprika, sea salt, and black pepper in a small bowl until smooth.
  3. Combine the salad ingredients: In a large bowl, mix the cooled cauliflower with diced onion, sliced celery, and chopped hard-boiled eggs.
  4. Add the dressing and mix: Pour the dressing over the cauliflower mixture and stir until everything is well coated.
  5. Chill and garnish: Refrigerate the salad for at least 1 hour to develop flavors, if time allows. Before serving, garnish with chopped chives and a sprinkle of paprika if desired.
