- 8 scallions (green onions)
- 1–2 teaspoons olive oil
- 1/4 teaspoon kosher salt
Dip Base
- 1 cup (240 grams) sour cream or Greek yogurt
- 8 ounces (225 grams) feta cheese, crumbled
- 1-2 cloves garlic
- 1 tablespoon lemon juice
Instructions
- Prepare the scallions: Trim both the root and green ends of the scallions. Toss them with olive oil until they are well coated. Sprinkle with 1/4 teaspoon kosher salt evenly.
- Char the scallions: Choose one method to char the scallions. Broil method: Set your oven broiler to high and place the scallions on a rimmed baking sheet. Broil for about 5 minutes or until they develop a smoky char. Grill method: Heat your grill to medium-high (around 400°F / 205°C), lightly oil the grill grates, then grill the scallions for 5-7 minutes, turning frequently until wilted and slightly charred.
- Make the dip base: In a food processor, combine the sour cream or Greek yogurt, crumbled feta cheese, garlic cloves, and lemon juice. Pulse the mixture until it is smooth and creamy.
- Incorporate charred scallions: Coarsely chop the charred scallions and carefully fold them into the dip. Alternatively, you can add the scallions directly to the food processor with the other ingredients and pulse briefly to mix them in while retaining some texture.
