Instructions
- Preheat Oil: Pour 2 inches of oil into a large stockpot and heat over medium heat until the temperature reaches 375°F (190°C) for optimal frying.
- Prepare Cheesecake Filling: In the bowl of a stand mixer fitted with a paddle attachment, combine the cream cheese, sugar, lemon juice, vanilla extract, and salt. Beat on high speed for 1 to 2 minutes, scraping down the sides occasionally, until the mixture is smooth and creamy.
- Wrap Egg Rolls: Lay one egg roll wrapper on your workspace with a corner facing you. Spoon about 2 tablespoons of the cheesecake filling onto the wrapper. Fold the bottom corner up over the filling, then fold in the left and right corners towards the center, forming an envelope shape. Brush a little water on the top corner to seal the wrapper and roll it up tightly to form the egg roll. Place the wrapped egg roll on a plate. Repeat this process until all wrappers are filled and rolled.
- Make Cinnamon Sugar: In a small bowl, whisk together 1 cup sugar and 2 tablespoons cinnamon until well combined. Set aside.
- Fry Egg Rolls: Once the oil reaches 375°F, carefully place about 4 egg rolls into the hot oil. Fry for approximately 2 minutes or until they turn golden brown and crispy. Use a slotted spoon or tongs to remove the egg rolls from the oil and drain them on paper towels. Repeat with the remaining egg rolls.
- Coat in Cinnamon Sugar: Immediately roll the hot fried egg rolls in the prepared cinnamon sugar mixture, ensuring they are evenly coated.
- Serve: Serve the cheesecake egg rolls warm with your choice of caramel sauce, chocolate sauce, chopped strawberries, and/or a dusting of powdered sugar for added flavor and decoration.
