Ingredients
Dry Ingredients
- 1/2 cup rolled oats
- 1/4 cup protein powder (such as Ritual)
- 1 Tbsp chia seeds
Wet Ingredients
- 1/4 cup milk of choice
- 1/4 cup cottage cheese (good culture recommended)
- 1 Tbsp maple syrup (sweetener)
- 1/2 Tbsp vanilla bean paste (or 1 tsp vanilla extract)
Fruit Toppings
- 2 Tbsp strawberry slices
- 2 Tbsp fresh or frozen blueberries
Instructions
- Combine Dry Ingredients: In a bowl or jar, stir together the rolled oats, chia seeds, and protein powder until evenly mixed.
- Blend Wet Ingredients: In a blender, add the milk, cottage cheese, maple syrup, and vanilla bean paste. Blend until smooth to create a creamy base.
- Mix Ingredients Together: Pour the blended wet mixture over the dry oat mixture, then stir thoroughly to combine all ingredients evenly.
- Refrigerate Overnight: Cover the bowl or jar and refrigerate for at least 6-8 hours, preferably overnight, to allow the oats and seeds to absorb the liquid and soften.
- Add Toppings and Serve: In the morning, stir the oats well. Add your favorite toppings such as fresh strawberry slices, mashed microwaved frozen blueberries, and crushed graham crackers for added texture and flavor. Enjoy immediately.
Notes
- You can substitute the protein powder with your preferred type or omit it for less protein.
- Use any milk of choice—dairy or plant-based—to suit dietary preferences.
- Microwaving frozen blueberries for 30 seconds and mashing them releases juices and enhances flavor.
- For a vegan version, substitute cottage cheese with a plant-based alternative and ensure protein powder is vegan.
- Overnight soaking time can be extended to up to 12 hours for softer oats.
