Description

A deliciously creamy and spicy Cheesy Hot Honey Corn Dip featuring roasted corn, green chiles, and a blend of cheeses topped with crunchy Fritos. Perfect as a party appetizer or snack, this dip balances sweet heat from hot honey with savory flavors and a satisfying crunch.


Ingredients

Vegetables and Base

  • 2 tbsp avocado oil
  • 1/2 yellow onion, diced
  • 1 red pepper, diced small
  • 2 cans corn, drained
  • 4 oz can green chiles

Seasonings

  • 1/2 tsp salt
  • 1/2 tsp pepper

Dairy

  • 8 oz brick neufchatel or 1/3 less fat cream cheese, softened
  • 1/2 cup plain Greek yogurt
  • 2 cups shredded Mexican cheese blend

Other

  • 1/2 cup hot honey
  • 1 cup crushed Frito scoops, plus more for serving


Instructions

  1. Preheat and sauté vegetables: Preheat your oven to 400°F (204°C). Heat a large saucepan over medium-high heat, then add the avocado oil. Once the oil is hot, add the diced yellow onion and red pepper and cook for about 2 minutes until they soften slightly.
  2. Roast the corn mixture: Add the drained corn and green chiles to the pan. Cook for 8-10 minutes, stirring occasionally, until the corn lightly browns and becomes roasted. Season with salt and pepper. Transfer the mixture to a bowl and let it cool for 10 minutes.
  3. Combine the creamy ingredients: To the cooled corn mixture, add the softened cream cheese and Greek yogurt. Mix thoroughly until well combined. Then stir in the hot honey and shredded Mexican cheese until evenly incorporated. Pour the mixture into a round 9-inch baking dish.
  4. Add topping and bake: Sprinkle crushed Frito scoops evenly over the top of the dip. Bake in the preheated oven for 30 minutes or until the dip is bubbling and the topping is slightly golden.
  5. Cool and serve: Remove the dip from the oven and let it cool for 15 minutes before serving. Serve with additional Fritos for dipping.

Notes

  • You can substitute the neufchatel cheese with regular cream cheese if preferred.
  • For extra heat, drizzle additional hot honey or add a pinch of cayenne pepper to the mix.
