Ingredients
Cherry Filling
- 7 cups fresh cherries, pitted (or frozen, ~1kg/35 ¼ oz)

- 3 teaspoons cornflour (US cornstarch)
- 1 tablespoon lemon juice (4 tsp)
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
Crumble Topping
- 115 g unsalted butter, coarsely grated and cold (1 stick / 4 oz)
- 130 g plain flour (all-purpose flour) (1 cup/~4 ½ oz)
- 66 g light brown sugar (⅓ cup packed / 2 ⅓ oz)
- Pinch of salt
- 85 g rolled oats (¾ cup / 3 oz)
- 25 g flaked almonds (¼ cup)
Instructions
- Prepare the Cherry Filling: In a 9-inch wide, deep pie dish or oven-proof skillet, add the cherries, sugar, and cornflour. Mix thoroughly to evenly distribute the ingredients.
- Add Flavors to the Filling: Pour over the lemon juice, vanilla extract, and almond extract. Mix again well to combine all flavors. Set aside while you prepare the crumble topping.
- Make the Crumble Topping: In a large mixing bowl, combine the grated cold butter, plain flour, light brown sugar, and a pinch of salt. Use your fingertips to blend these ingredients until the mixture is mostly combined and forms clumps. Some visible pieces of butter are fine.
- Add Oats and Almonds: Stir in the rolled oats and flaked almonds evenly into the crumble mixture.
- Assemble the Crumble: Scatter the crumble topping evenly over the cherry filling in the baking dish, covering it completely.
- Bake: Place the assembled crumble in a preheated oven and bake for 30 to 35 minutes, or until the topping turns golden brown and the edges are bubbling.
