Perfect for a quick, nutritious start to your day, it requires minimal prep and is ready after a few hours of refrigeration.
Ingredients
Cherry Puree
- 1 cup cherries, fresh or frozen, pips removed
- 2 teaspoons lemon juice
Overnight Oats Mixture
- 1 cup almond milk or milk of choice
- ½ cup Greek style yoghurt
- 1-2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 tablespoon chia seeds
- Pinch of salt
Toppings
- ½ cup Greek style yoghurt
- Fresh cherries
Instructions
- Prepare Cherry Puree: If using frozen cherries, ensure they are defrosted first. Add the cherries and lemon juice to a food processor or blender and blend until liquid, allowing a few small pieces to remain for texture.
- Mix Wet Ingredients: In a bowl, combine the almond milk, Greek yogurt, blended cherry puree, maple syrup, vanilla extract, and a pinch of salt. Stir well to blend everything evenly.
- Add Dry Ingredients: Stir in the rolled oats and chia seeds. Mix thoroughly, then let the mixture sit for 5 minutes before mixing again to prevent lumps from forming due to chia seeds absorbing liquid.
- Refrigerate: Cover the bowl or divide the mixture into jars. Refrigerate overnight or for at least 4 hours to allow the oats to soak and flavors to meld.
- Serve: Spoon the overnight oats into two serving glasses. Top each with additional thick Greek yogurt and fresh cherries. Enjoy your nutritious and delicious breakfast!
Notes
- Using fresh cherries is preferable for the best flavor, but frozen cherries work well once defrosted.
- Adjust the sweetness by varying the amount of maple syrup according to your taste.
- For a dairy-free version, use plant-based yogurt and milk.
- Overnight oats can be stored in the refrigerator for up to 2 days, but are best enjoyed fresh.
- To enhance texture, make sure to stir the mixture both before and after resting for 5 minutes.
