Description

Delight in a refreshing and wholesome Cherry Overnight Oats recipe that combines fresh or frozen cherries with creamy Greek yogurt, almond milk, and wholesome oats. This make-ahead breakfast is naturally sweetened with maple syrup and enhanced with chia seeds for added texture and nutrition. Perfect for a quick, nutritious start to your day, it requires minimal prep and is ready after a few hours of refrigeration.

Ingredients

Cherry Puree

  • 1 cup cherries, fresh or frozen, pips removed
  • 2 teaspoons lemon juice

Overnight Oats Mixture

  • 1 cup almond milk or milk of choice
  • ½ cup Greek style yoghurt
  • 1-2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 tablespoon chia seeds
  • Pinch of salt

Toppings

  • ½ cup Greek style yoghurt
  • Fresh cherries

Instructions

  1. Prepare Cherry Puree: If using frozen cherries, ensure they are defrosted first. Add the cherries and lemon juice to a food processor or blender and blend until liquid, allowing a few small pieces to remain for texture.
  2. Mix Wet Ingredients: In a bowl, combine the almond milk, Greek yogurt, blended cherry puree, maple syrup, vanilla extract, and a pinch of salt. Stir well to blend everything evenly.
  3. Add Dry Ingredients: Stir in the rolled oats and chia seeds. Mix thoroughly, then let the mixture sit for 5 minutes before mixing again to prevent lumps from forming due to chia seeds absorbing liquid.
  4. Refrigerate: Cover the bowl or divide the mixture into jars. Refrigerate overnight or for at least 4 hours to allow the oats to soak and flavors to meld.
  5. Serve: Spoon the overnight oats into two serving glasses. Top each with additional thick Greek yogurt and fresh cherries. Enjoy your nutritious and delicious breakfast!

Notes

  • Using fresh cherries is preferable for the best flavor, but frozen cherries work well once defrosted.
  • Adjust the sweetness by varying the amount of maple syrup according to your taste.
  • For a dairy-free version, use plant-based yogurt and milk.
  • Overnight oats can be stored in the refrigerator for up to 2 days, but are best enjoyed fresh.
  • To enhance texture, make sure to stir the mixture both before and after resting for 5 minutes.
